an all time favorite summer main dish!

i've never linked up with Kelly before but decided this would be the time to do it. who doesn't need more ideas for fabulous meals!?! i know i have enjoyed snatching some recipes from this week's "show us your life" series.

i'm not much of a cook. in fact most of what i do is mediocre at best which stinks when your husband sells food for a living. he gets to try the best of the best (this week he was in chicago visiting some cutting edge restaurants-you'll have to ask him about some of the food he tried like blood sausage and duck egg covered fries...both of which i don't think i'd even try!). anyway, he's learned to live with the fact that i'm not a cook and probably never will be. however, last summer i tried a new recipe and he loved it so much he even shared the recipe with one of his restaurants thinking they might want to incorporate it into their menu. wow! talk about the ultimate compliment! :) i knew i found a keeper. this recipe is soooo simple too which makes it even better for someone like me who doesn't like to cook!

so now, that i've talked it up, here it is...let me know if you try it and how you like it!

salmon fillet w/marinade

1/4 cup of packed brown sugar
1/4 cup of reduced-sodium soy sauce
3 tablespoons unsweetened pineapple juice (i leave this out because i never have it on hand!)
3 tablespoons red wine vinegar
1 tablespoon lemon juice
3 garlic cloves, minced
1 teaspoon pepper
1/4 teaspoon hot pepper sauce
2 salmon fillets (you can actually do more than this)

in a large resealable plastic bag, combine the first nine ingredients; add salmon. seal bag and turn to coat; refrigerate for 15 minutes (i also do this longer sometimes), turning once.

coat grill rack with nonstick cooking spray before starting the grill. drain and discard marinade. place salmon skin side down on rack. grill, covered, over medium heat for 13-15 minutes or until fish flakes with a fork.
